Alpine cheese of Funes valley
Alpine cheese is made from raw milk. Depending on the fat content of the milk, the alpine cheese is produced as medium-hard or hard cheese.
The name "alpine cheese" comes form the fact that originally the cheese was made with the milk in higher regions in summer. Nowadays, it is produced also in the valleys over the whole year. Depending on the place of origin, the flavour of the alpine cheese can be described from mild to aromatic.
